Tarte aux Légumes

Ingrédients:

– 1 pâte brisée ou feuilletée

– 2 courgettes

– 1 poivron rouge

– 1 poivron jaune

– 1 oignon rouge

– 200g de tomates cerises

– 150g de fromage de chèvre frais

– 3 œufs

– 100ml de crème fraîche

– 50g de parmesan râpé

– 2 cuillères à soupe d’huile d’olive

– Herbes de Provence, sel et poivre, au goût

Instructions:

1. Préchauffez le four à 180°C (thermostat 6) et chemisez un moule à tarte de pâte brisée ou feuilletée. Piquez le fond à l’aide d’une fourchette et réservez.

2. Lavez et coupez les courgettes, les poivrons et l’oignon en petits dés. Coupez également les tomates cerises en deux.

3. Faites chauffer l’huile d’olive dans une poêle et faites revenir les légumes coupés pendant quelques minutes, jusqu’à ce qu’ils soient légèrement dorés et tendres. Assaisonnez avec des herbes de Provence, du sel et du poivre selon votre goût.

4. Disposez les légumes cuits sur le fond de tarte préparé.

5. Dans un bol, battez les œufs avec la crème fraîche et le fromage de chèvre frais émietté. Assaisonnez avec du sel et du poivre.

6. Versez le mélange d’œufs et de crème sur les légumes dans le moule à tarte, en veillant à ce qu’il se répartisse uniformément.

7. Parsemez le dessus de la tarte avec le parmesan râpé.

8. Enfournez la tarte aux légumes et faites cuire pendant environ 25 à 30 minutes, ou jusqu’à ce que la croûte soit dorée et que la garniture soit prise.

9. Une fois cuite, sortez la tarte du four et laissez-la refroidir légèrement avant de la découper en parts et de la servir.

10. Dégustez cette délicieuse tarte aux légumes en tant que plat principal léger accompagné d’une salade verte, ou en apéritif lors d’un pique-nique ou d’un repas en plein air !
