Pastéis de Nata (Tarte Portugaise)

Ingrédients :

1 rouleau de pâte feuilletée 🥐

200 ml de lait entier 🥛

4 jaunes d’œufs 🥚

100 g de sucre en poudre 🍬

1 cuillère à soupe de farine de blé 🌾

Zeste de 1 citron 🍋

1 bâton de cannelle 🍃

Beurre pour graisser les moules à muffins 🧈

Sucre glace pour saupoudrer (facultatif) 🍧

Instructions :

1. Préchauffez votre four à 220°C (425°F). Graissez légèrement les moules à muffins avec du beurre.

2. Déroulez la pâte feuilletée sur une surface propre et découpez-la en carrés suffisamment grands pour tapisser les moules à muffins. Placez délicatement chaque carré dans un moule à muffins et pressez-le doucement pour le faire adhérer aux parois.

3. Dans une casserole, faites chauffer le lait avec le zeste de citron et le bâton de cannelle jusqu’à ce que le mélange commence à frémir. Retirez du feu et laissez infuser pendant quelques minutes.

4. Pendant ce temps, dans un bol, fouettez les jaunes d’œufs avec le sucre jusqu’à ce que le mélange blanchisse. Ajoutez ensuite la farine et mélangez jusqu’à obtenir une pâte lisse.

5. Retirez le bâton de cannelle et le zeste de citron du lait chaud, puis versez lentement le lait chaud sur le mélange d’œufs en remuant constamment pour éviter les grumeaux.

6. Remettez le mélange dans la casserole et faites chauffer à feu moyen pendant environ 5 minutes, en remuant constamment, jusqu’à ce que la crème épaississe.

7. Retirez la casserole du feu et versez la crème dans les moules à muffins préparés.

8. Enfournez les pastéis de nata pendant environ 15 à 20 minutes, ou jusqu’à ce qu’ils soient dorés et croustillants.

9. Laissez-les refroidir légèrement dans les moules, puis démoulez-les sur une grille et laissez-les refroidir complètement. Saupoudrez de sucre glace avant de servir, si désiré.
